Vegan Chocolate Chip Cookies


It’s no secret that my husband has an unquenchable sweet tooth.  He got it from his mama!  If I bake a batch of brownies, they wont last two days in our house…and remember, it is just him and I. No one else to blame the disappearing goodies on but him.  Bless his sugar-coated heart.

One of his all time faves is of course, chocolate chip cookies.  I’ve tried making Vegan chocolate chip cookies in the past but they never really satisfied the cravings. That is, until I found this recipe online a few weeks ago.  The cookies come out amazing every single time and they are sooooooo good.  I give props to the ladies over at Vegan Housewives because they hit the nail on the head with this cookie recipe!

Vegan Chocolate Chip Cookies

  • Servings: 20-24

Vegan Chocolate Chip Cookies

Ingredients:

1 cup coconut oil, melted
2 cup brown sugar
1/2 cup almond milk
2 Tbsp. vanilla extract
4 cups all purpose flour (other types of flour will change the recipe)
2 tsp. baking soda
2 tsp. baking powder
1 tsp. salt
1.5 cups vegan chocolate chips

Pre-heat oven to 350°.

In a large mixing bowl, blend together the coconut oil, brown sugar, almond milk & vanilla. The mixture will be runny.

In a separate bowl mix together the flour, baking soda, baking powder and salt.

Combine the wet & dry ingredients, then fold in the chocolate chips & any other mix-ins of your choosing.

Roll into Tbsp sized balls & place them on a parchment paper lined cookie sheet, then flatten them out a bit with your palm.

Bake for 7-10 minutes.
