Fiesta Quinoa Salad

Fiesta Quinoa Salad


2 cups quinoa
4 oz. cherry tomatoes, halved
1 orange pepper, diced
1 small red onion, diced
1/2 cup fresh cilantro, chopped
3 Tbsp. fresh lime juice
1/4 cup olive oil
1 lg garlic clove, minced
1 tsp. sea salt
1/2 tsp. fresh ground black pepper

In a pot, bring 4 cups water to a boil.  Add quinoa and return to a boil, reduce heat to low, cover and cook 18 minutes.

While the quinoa is cooking, half the cherry tomatoes, dice the orange pepper and red onion and chop the cilantro.  Place into a mixing bowl, set aside.

In a small, separate mixing bowl, add the lime juice, olive oil, minced garlic and salt and pepper. Whisk until well blended.

Once the quinoa is done cooking, remove from heat, remove the lid and allow to cool for about 20-30 minutes.

Once the quinoa is cooled, add to the bowl with the veggies and add the lime vinaigrette, stir to combine.

Taste and add more salt if desired.

Serve either at room temperature or refrigerated.
