Chocolate-Cherry Banana Bread


We had a few extra-ripe bananas lying around earlier this week and since everyone needs a sweet treat every now and again, we decided to indulge and make some decadent chocolate-cherry banana bread.  My husband has an unquenchable sweet tooth and so the banana bread didn’t last two days.  He ate it for breakfast, lunch and dinner until it was gone.

Chocolate-Cherry Banana Bread

Chocolate-Cherry Banana Bread


1 1/4 cup sugar
1/2 cup butter, softened
2 large eggs
3 very ripe bananas, mashed
1/2 cup almond milk
1 tsp. vanilla
2 1/2 cups flour
1 tsp. baking soda
1 tsp. salt
1/2 cup semi-sweet chocolate chips
1/4 cup dried cherries, roughly chopped
1/2 tsp. lemon zest
3 Tbsp. brown sugar

Pre-heat oven to 350°.  Grease bottoms of two loaf pans with coconut oil.

In a large bowl, add sugar and butter and stir to combine.  Add eggs, banana, almond milk, vanilla and beat with a whisk until smooth.

Add in flour, baking soda, salt, chocolate chips, cherries and lemon zest, stirring only until moistened. Do not over-mix.

Divide batter evenly into two loaf pans.  Sprinkle tops with brown sugar.

Bake on bottom rack in oven for 1 hour 15 minutes or until toothpick inserted into middle comes out clean.

Let bread cool in pan on a cooling rack for 90 minutes before slicing.
