Spicy Spanish Rice

Spicy Spanish Rice


**3 cups day-old, cooked rice (approx. 1 cup uncooked rice)**
2 Tbsp. olive oil
1/2 red pepper, diced
1/2 green pepper, diced
1 jalapeño, diced
1 small yellow onion, diced
1 small on-the-vine tomato
2 garlic cloves, minced
1/4 cup vegetable broth
1 Tbsp. tomato paste
Juice of 1/4 lime
1.5 tsp. paprika
1.5 tsp. cumin
Pinch of coriander
1/4 tsp. cayenne pepper
1/4 tsp. smoked paprika
1/8 tsp. chili powder
1 tsp. sea salt
1/4 tsp. fresh ground black pepper
1/4 cup fresh cilantro, finely chopped

Over medium heat, in a large skillet (we love our Lodge Cast Iron ), sauté the red pepper, green pepper, jalapeño, onion, tomato and garlic for approx. 4-6 minutes or until slightly tender, while leaving some crunch to the vegetables.

Add in the vegetable broth, tomato paste, lime juice, paprika, cumin, coriander, cayenne pepper, smoked paprika, chili powder, salt and pepper, stir to combine. Saute an additional 1-3 minutes.

Remove from heat and add in day-old rice, stir to combine

Taste and adjust seasonings as desired.

Sprinkle fresh cilantro over the top and serve as a side dish, throw it in a tortilla as a base for great burritos, or eat it all by itself.
