Baked BBQ Sweet Potato Fries

2 sweet potatoes
1 tsp. cumin
1 tsp. paprika
1 tsp. granulated garlic
1 tsp. onion powder
1 tsp. sea salt
1 tsp. chili powder
1 tsp. coconut sugar
1/2 tsp. smoked paprika
1/4 tsp. fresh ground black pepper
2 tsp. corn starch
1 Tbsp. olive oil

Peel and cut the sweet potatoes into fries. Place the cut sweet potatoes in a large bowl and soak in cold water for 1 hr.

Pre-heat oven to 450° and line 2 baking sheets with parchment paper, set aside.

In a small bowl, combine the cumin, paprika, granulated garlic, onion powder, sea salt, chili powder, coconut sugar, smoked paprika and fresh ground pepper. Stir to combine.

Drain the sweet potato fries and pat dry. Place in a large, brown paper bag along with the corn starch and shake until the fries are evenly coated.

Transfer fries back into a large bowl and toss with the olive oil first, then toss with  the spice rub mixture (you might not need all the spice rub, but we usually use the whole thing), making sure to coat evenly.

Spread potatoes into a single layer on the parchment lined baking sheets, making sure the fries are not crowded and bake for 15 minutes. Using a spatula, turn the fries over and cook an additional 10-15 minutes or until golden brown.
