Garlic Basil Pesto

Garlic Basil Pesto



1/2 cup pine nuts
5 garlic cloves, peeled
2 cups fresh basil
1/2 teaspoon sea salt
1/4 teaspoon fresh ground black pepper
2-3 tablespoons extra virgin olive oil


Toast the pine nuts in a dry, frying pan over medium high heat for approx. 3-5 minutes or until golden brown.  Stir often.

Add the toasted pine nuts, garlic, 2 cups fresh basil, salt and black pepper to a food processor.  While slowly incorporating the olive oil, blend until you get a finely chopped consistency.


*For a vegetarian variation: add 1/3 cup Pecorino Romano or Parmesan cheese.   

Throw it on pasta with some fresh veggies, use it as a condiment for a veggie burger, or keep it simple…spread it on toast…my absolute favorite way to eat it!


I usually make a double batch and freeze half in a small recycled jar for a quick, mid-week meal down the road.
